Zucchini, onion, red bell pepper, yellow bell pepper and cherry tomatoes sprayed with extra virgin olive oil and sprinkled with kosher salt and fresh cracked pepper.

Grilled Zucchini, Baby Portabella Mushrooms and Chicken Breast

Off the grill tonight, zucchini, baby Portabellas and chicken breast. The zucchini had kosher salt, fresh cracked pepper and I sprayed them extra virgin olive oil. One of the mushrooms simply had Balsamic vinegar. The other two had chimichurri sauce (oil, vinegar, garlic, parsley and cilantro).

Have you been wondering what happened to me? Sorry about the long absence. I’ve been pretty busy with life. So much has been happening–good stuff. I won’t bore you with the details, except for one. I’ve been working on an iFoodography eBook. It’s been a lot of fun giving thought to what I’ve been doing and explaining the thinking behind the images. The eBook still in the early stages of production, but I thought I’d explain why I’ve slowed down posting images.

Anyway, today’s post is a salad I made for yesterday’s lunch. It’s baby spinach leaves, macerated strawberries, anchovies, capers, Feta cheese, Kalamata olives, Cajun seasoning, Balsamic vinegar and extra virgin olive oil. It’s amazing how much spinach you can eat and how few calories that adds up to.
