Frying ripe plantains (maduros). They have a different flavor and texture when green than when ripe. Love the ripe ones with a fried egg for breakfast. I dunk the plantains in the yolk.
Arroz con gandules (rice with pigeon peas), a favorite Puerto Rican rice dish. My grandmother would serve this with tomato slices. We only had cherry tomatoes the day I shot this photo.
I fried up some green plantains. They always remind me of Grammy and my childhood in Puerto Rico.
