Frying Ripe Plantains (Maduros)


Frying ripe plantains (maduros). They have a different flavor and texture when green than when ripe. Love the ripe ones with a fried egg for breakfast. I dunk the plantains in the yolk.

    I love plantains when they’re sliced thinly, like chips, sprinkled with a bit of saffron and salt and fried to a lovely crisp. It’s beautiful. Never tried dunking them in yolk before but I think I can imagine 😉
